I JUST MADE AN AWESOME CHOP SALAD out of basics found in the supermarket. Seriously, it turned out so fresh and so good that I’m not sure why I haven’t made this sooner! Here are the basics:
- 2 cucumbers, chopped
- 1 ripe avocado, cubed
- 1 pint cherry tomatoes (you can cut them in half if you so wish)
- 2 Tbsp chopped fresh basil
- At least 1 cup of mozzarella cheese (the pearl balls work fantastic!)
- 1 tsp. garlic powder
- 1 Tbsp. extra virgin olive oil
- 2 Tbsp. balsamic vinegar
- Salt and pepper to taste
Place your salad ingredients into a large bowl and give it a quick toss. Drizzle your olive oil, vinegar, garlic powder, salt, and pepper on top and toss the salad again. This tastes best if served immediately.
