Caprese Salad Redux

I JUST MADE AN AWESOME CHOP SALAD out of basics found in the supermarket.  Seriously, it turned out so fresh and so good that I’m not sure why I haven’t made this sooner!  Here are the basics:

  • 2 cucumbers, choppedImage
  • 1 ripe avocado, cubed
  • 1 pint cherry tomatoes (you can cut them in half if you so wish)
  • 2 Tbsp chopped fresh basil
  • At least 1 cup of mozzarella cheese (the pearl balls work fantastic!)
  • 1 tsp. garlic powder
  • 1 Tbsp. extra virgin olive oil
  • 2 Tbsp. balsamic vinegar
  • Salt and pepper to taste

Place your salad ingredients into a large bowl and give it a quick toss.  Drizzle your olive oil, vinegar, garlic powder, salt, and pepper on top and toss the salad again.  This tastes best if served immediately.

Sweet, simple, to-the-point, and all sorts of awesome!
